This work aims to characterize chicken fat by-products, assessing their particular lipid profile and colour properties for his or her potential usage as fat resources in beef services and products in substitution of usually used fats. In addition, the role of farm area, maintaining the feeding and other farmer routines fixed, into the lipid profile was also examined. "Parrilleros" Colombian chickens from three farms located in
