This study determined the inhibitory effect of Lactobacillus brevis KU15153 against cariogenic Streptococcus mutans KCTC 5316. Antimicrobial activity, auto-aggregation, cell surface hydrophobicity, exopolysaccharides (EPS) production, biofilm formation, and morphological changes were assessed in the presence of L. brevis KU15153. L. brevis KU15153 exhibited the highest antimicrobial activity against S. mutans KCTC 5316 (28.67 ± 4.16 mm). Auto-aggregation (38.32%), cell surface hydrophobicity (27.08%), and EPS production rate (58.52%) of S. mutans KC
